Another delicious topping mixture for proteins, veggies, couscous, etc.!
Makes: 2 servings.
- 3-4 cups onion slices
- 1-2 tbsp oil
- 1-2 teaspoons ginger
- 2/3 teaspoon sweet paprika
- 1/2 teaspoon cumin
- 1/3 teaspoon turmeric
- 1/3 teaspoon salt
- 1/3 teaspoon cayenne pepper (or black pepper)
- 1/3 saffron threads
- 1/3-inch-piece of cinnamon stick
In a bowl combine ginger, sweet paprika, cumin, turmeric, salt, cayenne pepper, saffron threads.
Gently mix onions into spice mix. Taking care to keep as much of the ring tacked as possible.
Transfer onions to skillet or tagine warmed
