African Pork Carnita Meat | Lagos Groceries

Great with naan bread!

Makes: 6-10 servings.

Ingredients:

  • 1 3-5 lbs. pork butt roast
  • 1 tablespoon butter or ghee
  • 1/2 tablespoon olive oil
  • 2/3 cup onions, diced
  • 1 /2 teaspoon minced garlic
  • 1 tablespoon ginger, minced
  • ½ teaspoon turmeric, minced
  • 1 teaspoon jalapeno, minced
  • 1/2 tablespoon cumin seeds
  • 1/2 teaspoon chili pepper
  • 1/2 teaspoon cayenne pepper
  • 1/3 teaspoon cloves
  • 1/2 teaspoon saffron threads
  • 1/3 teaspoon cinnamon
  • 1/3 teaspoon chicken bouillon
  • 4-5 cups chicken stock
  • 1 cup finely diced parsley
  • Salt pepper to taste

Directions:

In a pot warmed over medium heat, sauté onions, garlic, ginger, turmeric, jalapeno 1-2 minutes.

Add in cumin seeds, chilli pepper, cayenne pepper, cloves, saffron threads, cinnamon, and chicken bouillon. And sauté 40-45 seconds.

Add in stock and bring to boil.

Reduce heat, cover, simmer 20-25 minutes then shred. Simmer for another 7-10 minutes.

It’s done when meat is no longer pink or running unclear juices. EATING UNDERCOOKED PORK IS HAZARDOUS FOR YOUR HEALTH.
